      Duncan Hines Yellow Cake Mix
6 oz. frozen coconut, divided (also called coconut pulp or shredded coconut – near the frozen fruit)
      1 tsp. coconut extract
      2 c. milk
      ¾ c. sugar
8 oz Cool Whip (Pam uses Tru Whip)
    • Instructions
      1. Prepare 9 x 13 pan, preheat oven, and mix cake according to the cake mix directions, adding in the coconut extract and 3 ounces of coconut. Pour batter into prepared pan, bake according to the directions.
      2. While cake is cooking, heat 2 cups of milk with 3/4 cup sugar until sugar is dissolved. Pour over the top of the cake as soon as it comes out of the oven. Cool completely. Frost with 8 ounces of Cool Whip and sprinkle with remaining 3 ounces of coconut.
